Mmmm - Pasta Potato Salad
1 cup elbow macaroni cooked
- 2 large red skinned potatoes, unpeeled, cubed and cooked
- 1 carrot coarsely shredded
- 2 tbs. minced red onion
- 1 stalk celery diced
- 1 cup of mayonnaise or enough to bind
- salt and pepper to taste
Optional ingredients
- Add 2 cans albacore tuna/seafood drained
- Add 2 cups diced cooked poultry
- 1/2 cup cooked green peas
- fresh chopped parsley to taste
Combine macaroni, potato carrot, onion and celery. Add enough mayonnaise to bind the other ingredients. Add salt and pepper to taste.
Add optional ingredients as you please. Makes a large bowl serving 8 to 10.
The pasta and potato combination is very delicious. A nice change from basic macaroni or potato salad! - rosskat@pipeline.com
