Make the dressing - Combine in a bowl:
Bring a pot of water to a boil with:
Add:
Turn off the heat and let the shrimp sit in the water for one minute. Drain and put the shrimp into a bowl of cold water to stop the cooking process. Drain.
Combine in a bowl:
Toss the shrimp and 4 Tbsp. (60 ml) of the dressing with the vegetables.
Divide: 3 cups (750 ml) salad greens between 4 plates. Drizzle the lettuce with a little of the dressing. Arrange the shrimp and vegetable mixture on top of the salad greens.
Garnish the plates with: sprigs of cilantro
