Mmmm - Thai Red Chicken Curry 


  Simple mild curry chicken and potatoe thai recipe from: mcmath@colorado.edu

 

I make thai curries all the time. One curry that uses potatoes is called massaman and uses chicken or beef. This is approximate since i dont measure ingredients.

For two:

Fry chili paste in oil until aroma is released, about 30 sec add onion, garlic and ginger and fry until nearly translucent. Add fish sauce, soy, other spices, sugar and cook a few minutes. Add coconut milk and chicken and potatoes and simmer until potatoes are done and chicken isreally tender.

serve over good thai sticky rice
